I built a similar replacement table and shelf arrangement several years ago but not quite the handiwork look of yours. But I got rid of the leg support by making it a suspended table...I had my reasons.....which you can check out on my website and clicking on the appropriate link along the left side of the website's opening screen.
Yes, I recovered the cushions in the main galley. I bought fabric at Fabric Land and sewed them together myself. The key is not to get rid of your old fabric, leave it on there... recover a layer on top.
I machine sew the two small sides (box corner) and the front side, then I hand stitch the back. I can do all cushions in a single night in this way. I'm not a good sewer, these cushions are the only thing I've ever sewn.
Total cost was about $200 CAD. That was enough fabric to cover all cushions twice.
