I just got a 10 ft. long whisker pole for my 25 ft. SR/SK. The pad eye on the mast is about 6 ft. up from the deck and it seems way too high. What is the correct distance from the deck to the whisker pole pad eye supposed to be?

Off hand I would say about 3 - 4 feet but you should set the padeye so it will allow the pole to be parralel to the deck when it is deployed. That would make it dependent on the cut of your sail. That is why a track mounted padeye is favorable. It allows for the use of variuos sails or additonal adjustments for fine tuning.

Are you sure that it's a whisker pole? On a C25 the whisker pole deployed on a 155% genoa needs to be at least 15' long. Forespar makes one that is 7' long extending to 15'. A spinnaker pole would be 10'.

A track is a good idea. Schaefer makes a car that uses a pull-pin so you don't need to install extra blocks and lines.
