I moved the winches from the mast to the cabin top during my "lines to cockpit" mod. They are very gummed up with old grease and I am getting ready to clean out all the old grease and was wondering what to use to lube the inside with.
I will be posting some pictures of the lines to cockpit mod and my new table.

I spent most of my money on boats and beer, the rest I just wasted.
The West marine product mentioned above or just about any white lithium grease. Use just a little bit, only a light coating. More grease means more gunk & dirt later.

Most likely your winches are made by Lewmar. But even if they are not, Lewmar sells a winch maintenance kit that includes grease, oil, how-to booklet and new springs for the pawls. Search on old posts about disassembling the winches, especially if they are re-attached to the boat. The old posts will talk about cutting a hole in the bottom of a box so you can put it arround the winch to catch parts from going over the side.
Patrick, I think you would benefit from making friends at the nearest West Marine or other boat chandlery. I often walk into the store with parts in my hands and a puzzled expression on my face, and the good folks there take me by the hand to the proper aisle. Yes, I know that Defender is cheaper and that anything with marine on it is three times the price. Service is worth something -- having someone with a face who can answer my stupid questions is valuable. Many of the questions you've been asking have their answers at your local boat store.
