When I ordered mine, I read a disclaimer that said the graphics should be applied a short time after receiving them, because the adhesive attaches itself to the backing. I can't apply mine until next spring, so took a gamble that it would be ok. Does anyone have any experience with a long delay in applying them? Is there anything you can do to help, such as storing them out of the light or keeping them in the fridge?
likely it is an issue with the release paper (over top of the letters) The vinyl itself should not stick over time to the waxed release paper it is on. If you are applying older stickers, put on the boat as per norm, but special attention is required to the release paper on top. Peel away at a sharp angle, very slowly and you should be ok.
I read the directions for applying these but wonder which way is easier, dry method or wet method. Anyone have some tips for installing these? Anything to watch out for?

I bought a set during last year's sale and never applied the names to my hull. I just checked and they seem ok relative to the heavy paper, not sure about the top paper though. Too cold to apply now and see if the top paper will peal off, but I would think a hair dryer would ensure the top paper would release.
This is a professional applying my last name. Note he taped it on the hull with both sides of paper still on to ensure he had the placement perfect. Then he freed the left side of the decal and pulled the left half over the right half. Then used a razor blade and slit the backing paper at the mid fold, peeled it off and then laid the left half back down onto the hull using a hard squeegee. He repeated the the technique on the right side. He worked a few small bubbles out with the squeegee and was done. (notice the pieces of tape he stationed on the hull before he started)

I think you are far more likely to get all the bubbles out with this method. Also, IIRC you can slide the decal around on the wet hull until you get its placement perfect. However, I minimized the need to do this by taping the top to make a "curtain," pulling off the backing, spraying the hull and back side of the decal liberally with soapy water, and then rolling the curtain down onto the hull. Once it's in the right place, you can start to squeegee out all the water (and the bubbles with it). I think I then allowed the whole thing to dry before trying to remove the front paper.
All of this is from memory, so please take it with a grain of salt.
I think I also made some index lines through the text on the front paper, and measured their distance from the trim stripes to make sure the text was parallel to the stripes and rub rail. Then I duplicated those measurements on the other side.
Even though I applied the decal less than a week after taking delivery, I do recall having some difficulty getting the paper to release from the back side of the text, especially along the narrow curved sections of the letters. It's very easy to distort or tear the vinyl in those narrow spots, so you need to be careful how hard you pull on it.
I had previously forgotten this: Although my large name decals were applied within a week of receiving them, the hailing port decal for the transom sat for about 2 mo before I installed it. The release paper came off fine on both sides.
