What do you use above the waterline to seal openings. I am installing some instruments in the cockpit and I do not want to use 3M 5200 because from what I understand I will never get them out again.

You will receive a lot of great advice here from the forum, but if you wanted to conduct your own research (and have a handy guide too) I just found this site which describes in detail many of the 3M products. Check out page 93 as it provides a nice diagram of their marine adhesives and sealants.

I have settled on clear maring silcone for devices that are mechanically attached. You don't need adhesion, just waterproofing.
