You could keep the anchor in the cockpit area (even tied up on the pushpit) with the anchor line run aft. Then just dump it when you are heading astern from where you want the anchor.
At age 15 in the Royal Navy (yep we could join at 15!) I was in a ships dinghy with a 200lb Admiralty anchor hanging of the stern rowing away from the ship with the intent on dropping a second anchor. It was an excerise in futility.. one of those 'this'll givem somit to do skipper!' things.
