Can someone enlighten me on the C25 plumbing? Is the valve under the V birth for both raw water intake and head discharge? What is the valve under the head sink for? I would like to replace the rusted semi-frozen gate valves with good quality sea cocks and replace the head if necessary. Last year was my first season and I found I could not get raw water to pump into the head. I had to add water with a bucket. It pumped out fine. Any ideas? I know I threw a lot of questions in this post. Thanks.

Depending on your configuration, the valve under the V-berth could be the head inlet, head sink drain, or both. The head discharge line goes up to the deck, not down through the hull.

The valve under the sink is the drain for the sink.
You have another thru-hull under the galley stove, if you didn't already know. This one is the drain for the galley sink and icebox. If your boat is like most C-25's of her age, the insulation around the icebox has long since degraded to the point that it is almost worthless for storing cold food; but it does make a nice dry storage locker. Just disconnect and plug the drain hose. It is also just the right size to hold a small Rubbermaid kitchen wastebasket. Some owners have replaced the insulation around the icebox, but it's not an easy job, especially if you are no longer young and spry.
If you are replacing the old gate valves and they are connected to "To Hulls" (pipes that are simply glassed into the inner hull), then you might want to go the distance and replace these with actual "through hulls".
As stated above, the valve under the V-berth probably is for the fresh water inlet for the head, and also as drain for the head sink. The reason why you could not get water in to flush the head: you need to close the head sink with the stopper before you try to "wet" the bowl.
Pluging the head sink is an interesting thought. My head pumped OK without pluging the sink but it did always take a few strokes to get the pump primed.
I am replacing my to-hulls with these through hulls from Forespar. They are Marelon so they will not corrode. I did not install a plywood backing, instead I built up the land where these valves will go with fiberglass and epoxy.The hull is 1" thick solid fiberglass at these locations. These valves will be installed with 5200 becasue they can be serviced without removing the king nut. They can also be serviced with the boat in the water. I think these valves are a slick setup. I have a 1984 with marine head. i have a valve under the v birth - this for head intake and head sink exhaust. I have a waste holding tank. This tank has water intake hose with at through deck fitting - this for pump[ out. It also has a through hull. the waste from the head is routed to the through hull, where a large y valve is located. if off shore more than 3 miles i am told i can open this and discharge the waste directly into the sea, however I leave this valve shut at all times. When shut the waste is re-routed into the holding tank. I also have a valve under the old ice box. this acted as a drain for the icebox as well as the galley sink. I now tend to use both of these for storage - so have blocked it off.
