Thats how it has always been done on boats I have owned and crewed on. If it is blowing above about 10 k., keep 3 turns of jib sheet on winch below the self tailing turn. Many sailors don't use the gripper on the winch but rather cleat the sheet which then makes easing it easier. I seldom used the self tailing part of my winches. I put large clam cleats on the coaming and used them when I needed to actively trim the headsail. I think self tailers are more trouble than they are worth on a sail that you can grind with one arm.
