Sean, does your 250 have a factory-installed head? Where is the holding tank? I'll be doing an installation of an MSD porta-potti with a pump out. Going all the way to the stern for pumpout and vent seems really far to me.
you want to keap the vent as short as possible . Peggie Hall "get rid of boat oders " is a good book.

Randy, a deck fitting can be installed either on top of the coaming or on the slope between the rub rail and the top of the coaming.
You will likely be choosing a position somewhere similar to mine as my holding tank is aft of the wet locker. This would allow the discharge line to enter fairly low into the wet locker so as to not disturb its space too much, travel across the bottom and turn up either forward of the back bulkhead of the locker or go through that bulkhead also and then turn up behind it.
The pic shows the location as the line comes through the liner. The hole is drilled from outside through both the hull and the liner. The pump out line does not interfere with hanging things in the locker but the discharge to the tank does inerfered slightly albeit the locker is still used for hanging foulies and a couple of spare jackets for a crew of two.
btw-1, If I recall, those who have installed a one piece pottie holding tank unit, have clearance problems with the hanging locker door and cut a corner of the door and affix to the bulkhead.
btw-2, that plumbing tree mess is to provide a choice of normal pump out or self discharge into a sewer clean out beside the drive way. When cruising the Great Lakes, plenty of pump out locations... but none for local sailing in Texas.
