I had the mast(s) stepped for some work I had done. They put the pins holding the shrouds with the flatheads pointing inboard.

Now the cotter pins or rings get snagged on the jib sheets and get ripped off.

How hard is it to remove the pins and put them in the right direction without having to futz with the shroud tension and a such?

Am I over thinking this and fearing the mast will topple over?

Yep, overthinking it. One at a time, Loosen each turnbuckle 5 or so turns, Reverse the pin then tighten the turnbuckles up the same amount of turns. It won't fall down but you can tie your main halyard off to a stanchion or rail on the side your working on as a temporary stay if it makes you feel better. Or you could just put rigging tape around the cotter pins.
