Our local lake does not have pump out facilities therefore rendering my head useless. Has anybody found or made a portable holding tank or do I need to take everything out and install a porta head.

"...you need to handle that with care..."
Good thing this isn't a Sailing Anarchy forum; those guys would have a field day with that phrasing!

Erik, I have to agree with you on that. If it’s only #1, then it’s a piece of cake. If there’s a little solid matter and paper, well, that’s a little more dealing you have to do. Let me say that its very doable, but you need to handle that with care.

My lake also doesn't have a way to pump out, but the porta potty is ok. With heavy use maybe every two weeks to empty, light use every six weeks. It's not as bad as I thought it would be.

I’m not sure how your current head is plumbed in, but I’m sure there’s a kind of gravity feed from the bowl to the holding tank. Good practices would advise that the holding tank be solidly bolted in to prevent movement. One option would be to remove this tank and replace it with a handheld plastic jug with a removable hold down like clips or a bungee. You’d also need a way to completely empty and flush the hose and seal the tank before disengaging it.
My port a potty has a gasketed bottom tank with a flat shutoff that allows you to completely seal the tank before walking it over to the restrooms for clean out. Perhaps you can figure out a way to adapt that mechanism for your purposes..
It could be a kluge but if you got it to work it would be absolutely brilliant.

Like Davy said your choices are costly to simple. Another costly way would be to install a macrinator pump then get the hose and deck fitting along with a portable tank to pump into. Or you could just remove the head and just cap off the hose and put a portable in the space. Or leave the head alone and put a portable in the space under the V berth in front of the inspection door. It could be kept in place with a bungee across the front.

I think these may be your only options, from pricey to unpleasant:

Composting Toilet

Waste Caddy

Portable toilet

My Gemini is equipped with the first option, no need to carry flush water, can remove holding tank and components freeing up space. Easy to empty and can go quite a long time before needing to do so. Of course it's expensive........
